Hen turkeys lay the first egg and usually skip day two before laying the next dozen or so eggs one a day until they finish.

The Beard: The most obvious difference between hens and gobblers is the beards that the males (gobblers) have. This is often the easiest method to identify gobblers but in some instances (~10%) hens have beards too! So use this as you first indicator but just keep in mind that it isn't fool proof.

Studies have shown that snood length is associated with male turkey health. In addition, a 1997 study in the Journal of Avian Biology found that female turkeys prefer males with long snoods and that snood length can also be used to predict the winner of a competition between two males.

Turkey hunters that shoot a basketball-size pattern at 40 yards miss more turkeys at 10 than anybody else.

The Aztecs domesticated another subspecies, M. gallapavo gallopavo, the south Mexican wild turkey, and the Spanish brought those turkeys to Europe. The pilgrims then brought several of these domestic turkeys back to North America.
