Just finished an old post about all the different game everyone prefers. Made me very hungry especially the one about young gray squirrel with biscuts and gravy. As it is Turkey season and everyone is geared up to hunt I was wondering what your favorite recipes are. I would certainly like to try some thing new this year. Had some great Turkey tots in New Mexico a couple years ago.
Mainly nuggets just fried.

Fried with milk gravy and biscuits
I cut the breast into serving sized steaks, olive oil salt pepper and grill, amazing! Also pound em flat and make a schnitzel, yum!
Thighs and drums for soup.
I used to do fried nuggets, then my wife - aka. Paula Dean Jr, turned me on to her fabulous home made, wild turkey pot pie!!!!! Let me tell ya boys, it's awesome!!! On occasion I also use the turkey breast for any chicken based recipe you can think of. The only limit is your imagination!!

I smoke the breast with rub that is heavy on pepper.
Marinated with a Cajun butter sauce , then fried is good . We ate some last night !
But my favorite is turkey wraps , filet small strips , stuff with cream cheese and jalapeños then wrap with bacon . Cooked on pit or in oven. When the bacon is done , they ready to eat .
Really hoping I can make wild Turkey enchilada casserole this year. Got the recipe from a Hunting Public video from two years ago. Had to cook the legs and thighs for 18 hours in the crock pot to get it to fall off the bone- but man it was worth it!
I just skin the whole bird. Inject with a creole seasoning, butter and water mixture then cold smoke for about 6 hours. Then I debone everything and dredge in flour, fry in more butter and creole seasoning. Even the dark meat is delicious. Planning on doing one Friday for some family coming in from Chicago.

I like making fajitas out of it. Or brown it and cook it down with potatoes and cream of mushroom soup.
Cut the breast up into bit size nuggets, marinated in Italian dressing overnight wrapped in bacon then grilled. Use tooth picks or spaghetti to hold the bacon on. Served with ramps and fried potatoes.

Usually fried nuggets or strips, but my favorite is a tossup between turkey pot pie and turkey and noodles.
Usually fried nuggets, but sometimes I will coat a breast with olive oil and Yardbird rub and smoke it on my EGG.
I like to turn them into fajitas or I make turkey, bacon, cream cheese and jalapeno poppers.

I've got a couple favorite ways. Sliced turkey breast w/barbecue sauce on the grill is great. Otherwise, breast or dark meat, crock potted is great and the only way I've found to tenderize it. Note: if your crock pot doesn't get hot enough to simmer throw it in the garbage and get one that will...otherwise it will never tenderize. Additional note: for those 5 or 6 month old fall birds it's sinful to cook them any other way than roasting them in the oven with one of those brown-in bags.
Brined and smoked.
Cut into decent sized strips and marinate overnight in Italian dressing. Cut jalapeños in strips and get rid of the seeds. Place a couple of jalapeño strips on the turkey and wrap in bacon and then grill. We had it for supper tonight from my son's juvenile kill. Its my favorite meal.
Fried strips, turkey casserole, turkey tacos, turkey and dumplings. The legs and thighs are ground up and used for chilli and turkey meatballs

I've been making this for the past two years and it's amazing! I actually have 2 casseroles prepped and in my freezer right now. They work great for taking to camp or when my wife and I don't feel like cooking. I also make an wild turkey breakfast sausage from a recipe in the Meateater cookbook. It's fantastic (once you cut the salt). I'm looking to try a couple new ideas this year. I found a soup that calls for pheasant but I figure I'll just substitute the pheasant for turkey and I really need to get on board with these turkey pot pies people have been talking about.
Wild turkey poppers,Superbowl Sunday and opening day turkey eve are two nights that are reserved for these and maybe a few other days throughout the year. The poppers have become my favorite wild game snack,easy to make,easy to eat,easy to clean up after and you can do them with so many little recipes.
I don't fry much fish anymore. have other recipes that are better for ya and taste better too. Fried turkey nuggets is still my favorite way. Have grilled and done the pot pie thing, but fried nuggets is my daughter's favorite meal, so I usually fry them. Dunked in pancake batter, wet with lots of pepper and a bit of salt, rolled in lightly crushed corn flakes and fried to golden tender. I have some wings, legs and thighs I have and am gonna get my wife to make her pot pie (pheasant pot pie is awesome too)crock pot for that.
I like the idea of cold smoking too. I may have to try that.
Breast them out cut the silver clear skin off. chunk them up soak them in dales mardine and put on kabobs and grill. its very good

Brining is your friend with all of the above
Also mix with applewood bacon ends and make burgers
Breakfast sausage

The possibilities are endless if you treat it right. I cringe when I hear people say they don't like the taste of wild turkey, and hate to see people only use the breast meat.

Most of ours go into casseroles or pot pies. Sometimes noodles. Wife cooks them in an quick pressure cooker then shreds into a casserole with dressing, veggies, cream of chicken soup and seasonings. Pretty darn good.

Now, that looks good! Plenty of ideas on here which is what I needed (besides the turkey of course).
Here are the turkey poppers I made for the Superbowl,3 weeks and 2 days I will be enjoying another batch on the eve of opening day.
Ground 4-5lbs with 1lb of bacon ends and put on the grill with some sweet chipotle seasoning.
Chili is becoming our new favorite.
Cut the breast into 1" cubes, then marinate in Teriyaki Marinade in the refrigerator overnight. Skewer cubes and grill until corners are dark. Also, skin a pineapple and slice into spears lengthwise. Grill pineapple spears as the turkey is cooking. Enjoy some trophy eating!

I agree on the pineapple. Grilling really brings out the sweetness. I'm not so sure about the Teriyaki Marinade as it has never agreed with me. Thanks for the input!!
wings/legs get turned into soup, potpie, or something else slow cooked. thighs get deboned and ground for chili, tacos, etc. the breast gets smoked, turned into fajitas, sliced up and pounded for fried cutlets and gravy and mashed potatoes, or any chicken recipe of your choice.

Last one I did I ground it was some good fat and then made empanadas out of them. I bake them in the oven but if you have the fryer they're good fried. Bubba

Have to try this one for sure. We do this with beef and Bone suckin sauce. Sauce just carmalizes and gives a super sweet taste.

I like to marinate in Lupos original but italian dressing or state fair will do.
For the breast, our favorite is fried nuggets. Legs and thighs, treat them like a beef pot roast. Potatoes, carrots and onions in the crock pot.
