I tried a taste of maple syrup made with habanero in it . Made by Generals hot sauce. Man was it good.
Think I will go back and get some and try it on some trout. 
How do you go about doing it? Glaze it at the end?

Yup. Fry as normal with syrup instead of oil. Once done, drizzle some leftovers on top of it. It sounds like it's a crappy concoction but it tastes amazing.

Can try honey too. We've used honey on several occasions. It's been great.
