Old 1100 build

I'm planning on building a turkey gun out of my old Remington 1100 12 gauge 2 3/4 for my son.  Thinking of getting the 22" barrel and putting the Burris Speadbead on the back with a Fastfire sight.  Probably gonna paint it myself.  Big question is the choke.  I see a lot of .655 and .665 chokes being used.  Is there a "consistent" choke (brand or bore) for a 1100 with Remchoke?

If my memory serves me right most opt for something in the .665 range on the remingtons. That's just a generalization though

what shell you want to run.  It being 23/4 could be a problem.

Sumtoy is right, it depends on your shell ( type and pellet size). My observations are based on a 11-87, basically the same as a 1100. My .660 works better (uniform tight patters with few "holes" in the pattern) with smaller pellets like #6. If I am shooting larger pellet loads like #5, I get better patterns out of my .665. Both of these chokes are Jellyhead.

I would guess 660-665, there are some good 2.75 shells on the market. I'm not sure, but seems like Winchester was Gona make Long beards in 2.75. Federal makes HW's in #7's. There's a lot of options out there, guess it comes down to what you feel comfortable with.
