Beretta makes fine shotguns. I shoot a couple of 686s, one with 3.5" chambers that weighs 7.5 lbs and a 2.75" chambered ultralight at 6 lbs. I shoot TSS from both barrels, light mod with 1.25 oz of TSS 9s in the open barrel and 1.625 oz of TSS 9s through a Sumtoy .675 for the tight barrel. I used to shoot lead 7.5s from the open barrel. Cyl choke gives the widest possible patterns for close in work that is effective out to 20 yds. Imp cyl will get you to 25 yds with a slightly smaller pattern in close. Light mod or mod will get you to 30 yds, and a turkey choke will reach 35 yds, the limit for 7.5 lead shot.
One word of caution, full house turkey loads kick like a government mule through a double barrel, which is one reason I shoot TSS. A 1.625 oz load at reasonable velocity kicks much less than any factory turkey load and is of course much more effective. Since I shoot TSS with its attendant tight patterns, I shoot an FF III on a B-Square cantilever rib mount.
Good luck with your project. Shoot me a pm if you want to discuss further.
