Out of respect for my southern friends (Yeah you Catdaddy) I use the proper terminology of "Deer Meat" versus that yankee term "Venison"
Another deer season has come and gone and I didn't get to try smoking a deer ham. Maybe next year. Anyway after searching and searching I finally found the proper instruction and recipes I had been looking for. If you smoke meat or do your own butchering this is a great site

1 of my butchers makes them.. he cures it an smokes it just like a pig ham... boy it is good!!!!!!!!!!! i got 1 made from the doe i shot in archery... that was the first thing i told him to make when i dropped deer off....
