I'm having around 15 lbs of turkey breast, elk meat and pork loin ground with sharp cheddar and about a quarter lb of jalepeno peppers. All of it will be put in small sausage skins about half inch in diameter and smoked. My buddy does this as a side job. We've never tried the mix with elk but a friend give me some meat from a hunt last month so I'm going to throw some in the mix. The duo of turkey and pork was killer last season. I hope this new recipe turns out.
