I hate briars and bought a pair of Sitka Timberline pants used about 5 years ago.  Best pants for dealing with briars that I have.  The knee patches are generous and the perfect position for brush.  Combine with a pair of gaiters for longer armor.

I don't have any experience with them but Duluth trading offers a few versions of firehose pants for heavy duty and brush use. I have heard good reviews so they might be worth checking out.

I like my firehose flex brush pants.  Only thing is they'd likely get too hot for me during turkey season.  I do rely on them a lot for fall and winter bird and deer hunting.

I like the first lite corrugate guide pants. Owned a pair going on 7 years now and there's still going strong. The double side pockets are both very convenient and have zippers. Expensive but worth it. I find these pants on sale every year so its not to hard to find some for a reasonable price.

I have a pair of Duluth brush pants. They're awesome. A little warm for turkey season in the southeast but not losing 2 pints of blood while moving through a briar patch is worth it.

Really like the First lite sawtooth brush pants very light and quiet get them when on sale

Get some Duluth trading fire hose pants. I wore them a lot when I worked on kodiak island. They are good for work, but I also wore them blacktail hunting where I climbed through briars and alder brush. I still got the same couple pairs that are 5-6 years old
