South Texas or north Florida Recommendations?

Looking to take my son on a guided (or semi-guided) hunt some time in March and figured Texas and Florida to be the best options. Not looking for Osceolas. I searched on this site before posting and have contacted a number of guides only to find they are booked (good ones always are, right?). Does anyone know of any that might have openings for this spring?
