Spring Creek Calls

I saw Steve Rinella cook this a few years back on a Montana hunt. I tried it then and agree Mike, excellent recipe. Thanks for posting.

Old Timer

just made it last week but a little different. took a breast made a brine for 24  hours.

cut breast into portions
roll in flour
egg wash
Italian bread crumbs & panko
fry
put in casserole
cover with Italian sauce and mozzarella cheese
bake in pre heated over @ 325 for 20 minutes
no complaints everyone liked it.

This sounds exactly like I do my eggplant parmigiana. My mothers recipe that I've been eating for 60+ years.

This sounds exactly like I do my eggplant parmigiana. My mothers recipe that I've been eating for 60+ years.

Oh I love eggplant parm, no wonder we got along so good at the Call makers summit. Only thing there I have never used is panko, I will have to see if it can be adapted with either almond flour or coconut flour and I can make keto crumbs to use as the bread crumbs.
