Wild Turkey Salad (legs & thighs)

Spring Creek Calls

A very simple recipe and a great way to use those legs and thighs. Simply put legs and thighs in the crock pot, add water to cover meat. Add onion, garlic, salt and pepper. Place on high for first 8 hours, reduce to medium for remainder, a minimum of 24 hrs. Take meat out  and let cool. Pull meat off bones, if it hasn't already fallen off. I just pull it apart like pulled pork. Add mayonnaise, spicy mustard and your favorite relish, mine is our homemade zucchini relish. A couple slices of toasted sourdough bread, swiss cheese and you're in for a treat.

yep, we've made this for years with legs and thighs. i cook 'em about 10-12 hours on low in the crocker with water and poultry seasoning and the leg tendons pull right out
you can get creative on your ingredients, too. i usually go with mayo, chopped pickles (sweet or dill), red bell pepper and onions, and some herbs, usually thyme and dill
forgot the chopped celery  :D
