You might want to try stormranchhunting.com. They have a 2500 acre ranch not too far from Austin. They assign you a pasture,  (usually 500 acres) and turn you loose or you can request a guide. I have not used them but I have some friends that do and they are very happy with them. They have accommodations on site as well.  Good luck.

As others have said, they will gobble and probably gobble a lot.  Sometimes you will call and they will run in from the next county and you have to shoot him in self defense!  Most of the time, he will gobble because he likes to gobble and will leave you frustrated.  I have the best luck when I can get within 100 yards of a gobbler, whether on the roost or spotting one and using the terrain to close the distance.
