Why do I keep missing?

I'd try just drawing the head and neck a little bigger ,, should fix the issue .

  Shooting the paper, we all are calm, controlling beathing taking very careful aim, squeezing trigger nice and smooth.
But in the moment, all that can go to crap.
We've all done it. Dont give up youll get him.

I would say because you are shooting turkey loads and that is obviously a very large ptarmigan with a snood.    You are welcome.
