I remember hunts way more than the bird, I also take a lot of pictures and just seeing the pic will spark the memory of that hunt. I have a lot on FB that reminds me as well, several years ago I started video hunts as well, keeps the memory sharp

Worst thing for me, most all of my pictures are of the digital sort anymore. Back quite a while I was sent a virus through an email and lost a lot of those pictures... kind of saddens me but when I talk to those about those hunts they are still in my head.
I also started a turkey hunting log 28 years ago when I started hunting, it's filled with notes and dates things I have done.
Now I do remember some very "special" hunts that I hope to never to forget.
I have a number of "birds" display mounts up from some firsts, my first gobbler, Merriams, Rio and my first double and such, I have my "Top Ten" list of long spurred gobblers and can tell you the story on all of them!! And some "Long" beards that stand out.
And like a few have said, antlers are more "unique" and I can remember them all.
