I'm going to try making a wing bone call from a gobbler I killed this Spring. I've watched a couple videos, but I have a question. Do you have a length that you're looking for or just cutting for fit? Or should I just send the bones to someone who knows what they are doing?

EZ

Nothing wrong with trying it yourself, that's how you learn.
Keep in mind, just as the internals of a trumpet are very important, so are the internals of a wingbone.
You don't have much choice of the ID in a bone, but you can control the length depending that ID. Have fun with it.

Around 7 inches is typical

Lone Star Eastern

Does anyone have advice on epoxying feathers to the wingbone?

It's tricky.  I can't say I have figured it out but you need the epoxy they use for fishing rods.  I tried it with a different type and it looks like chit!
