Just had a great meal from the dark meat of one of my turkeys I got last spring and I'm sure a lot of folks don't realize how good the dark meat can be. I put it in a crock pot about 5:00 am-then I go back to bed -and remove and shred it about 10 to 12 hours later. Then make something good out of it. It's got a unique taste that you can't get anywhere else. If you haven't been eating it give it a try. I  guarantee when done right its got a surprisingly good flavor that you'll look forward to.

I'll have to try the hash, I really like hash. I always save the legs and thighs even when traveling. Makes great turkey salad and bbq.

Dice it,shred it or cut it up in chunks boil it up and add some good thick egg noodles serve it over a mashed potato or straight you've got a great meal

I like the dark meat.  It does require some extra work to soften it up but the flavor is worth the work.
