21lb 3yr old if memory serves correct.

Digging in my freezer for a some elk meat to make a stew with I found all the meat from a bird I shot in 2016 and simply had to evict him front the chest freezer asap.

Both breasts and tenders got an overnight soaking in some apple cider vinegar while I made the stew.. Then it was seasoned and placed into a crockpot of 8hrs before getting shredded, I added a healthy dose of honey Chipotle bbq sauce, sweet and smoky seasoning, a small amount of broth from the crockpot, few pinches of brown sugar and some tabs of butter then placed into my smoker for an hour to emerse some flavor.

I'll be honest I'm eating right out of the pan right now and having a pretty good time remembering the hunt I took the bird on. Hope he lasts longer in the pan then he did on the ground that morning because I shot him about 3 steps into his morning when he made the mistake of pitching out to the new hen in town which was my sleepy hen scratch box.
