Step 1 -
lay the breast down flat and take your knife and cut it horizontally (parallel to the table) to where you have two equal halves...then take a meat mallet and some plastic wrap and pound them out pretty good...then soak them in milk (buttermilk is best) over night...NOTE - the milk will be pink in the morning...its NOT strawberry milk...pour it out !!
Step 2 -
mix half a box of cream cheese with some garlic powder, salt, pepper, and Grill Mates "Kickin-Chicken" seasoning until everything is mixed smooth...then dice an onion and a jalepeno pepper up and mix into the cream cheese (food processor and throwing everything in is the best)...also have a pack of applewood or hickory smoked bacon ready...
Step 3 -
Lay a duck breast down and put a dollop of the cream cheese mix towards one end...then roll it up covering the cream cheese mix...then wrap one length of bacon around the rolled up duck breast...secure with a tooth pick...once complete put them closely fitting into a glass pan and hit them pretty good with worchestershire and teriyaki sauce and let sit in the fridge for a couple hours...
Step 4 -
put oven on 350 and bake for about 10 minutes (be sure oven is pre-heated to 350)...then turn the broiler on and brown the bacon...flip them over and brown the bottom (maybe another minute or so)
Step 5 -
EAT !!!
