My wife makes a tasty pot pie, substituting turkey breast for chicken in the recipe. This is one of my favorite ways to utilize a gobbler.

Tomato braised turkey legs. Heard about it on the wired to hunt podcast and tested it last year. Turned out fantastic. I shredded mine and made an open faced sandwich on a big hunk of Italian bread. It takes some effort but it is a meal fit for a king.  Here's the link.
