Title: Share your best BBQ sauce RECIPE
Post by: WNCTracker on February 04, 2018, 10:24:33 AM
I have this going on another forum just in NC for a good vinegar based one but OG is nationwide so I'd like to hear some good regional BBQ sauce recipes for pork. Alabama, Memphis, South Carolina, North Carolina, Texas, Missouri .....lets see some representation for your region!

My NC one (best I've found so far)
1 cup cider vinegar
1  TBS Dark brown sugar
1 TBS Ketchup
1 TBS Hot Sauce
1 TBS White Vinegar
1 TBS Pepper flakes
1 tsp black pepper
1/2 tsp kosher salt

Warm to dissolve. Don't boil!!!

May have to try this.  I just started smoking last year, usually just use a rub on ribs..... although I did try a vinegar based sauce when I took a trip to St Louis last year that was really good.  Here is what I use for rub

1/2 cup light brown sugar
1/2 cup turbinado sugar
2 tablespoon Kosher salt
2 tablespoons celery salt
2 tablespoons seasoned salt
4 teaspoons paprika
2 teaspoons ground black pepper
2 teaspoons chipotle powder
2 teaspoons granulated garlic
2 teaspoons chili powder
1 teaspoon white pepper
1 teaspoon onion powder
1 teaspoon mustard powder

I got a good ol boy who works with me , he ran a bbq operation in NC , getting bbq secrets out of him was as about as hard as someone trying to find out my secret hunting spots .....all bbq guys are very secreative

But he did tell be he cuts up onions and throws them on the charcoal , and that he has a cooking tray with vinegar that he puts above the coals at some time during the cooking operations. ..kind of like a water cooker I guess

As far as the seasoning , all he would say is SUGAR , lots and lots of sugar

Man I love bbq !

                                            West Kentucky style BBQ sauce.

This recipe makes a gallon. This sauce keeps well and you will have some for sharing with friends and neighbors..

4 cups sugar                    1/2 cup Crisco
2 1/2 cups catsup             2 sticks margarine
2 cups mustard                7 1/2 cups vinegar
2 tsp. red pepper             1/4 corn starch
3 tsp. black pepper          1/2 cup sugar
2 tbsp. salt                      1/2 cup cold water
1 cup water

Mix 4 cusps sugar, mustard, catsup, peppers, salt, 1 cup water, Crisco, margarine, and vinegar. Cook over low heat for 1 hour, stirring often. Mix corn starch and 1/2 cup cold water well. Add 1/2 cup sugar and pour into hot mixture. Bring to a boil for 30 minutes, stirring often. Let cool before putting in to storage containers.

I know there are a lot of ingredients and it takes a while to make but it is worth all the trouble.
