Figure enough guys in here work with wood that someone can answer.

I'm making a headboard from some cherry barnwood I got.  It's actually in pretty good shape and I lightly sanded it to get the splinters off. I would like to seal it as well but not sure what the best approach here is. I don't want a gloss poly but was thinking linseed oil or something may work great and bring out the color of the wood. Not sure pros or cons there or what other options I may have.

You can still go with a satin finish spray...

There are many satin clear wood finishes out there, I'd use a brush on finish rather than a spray. I don't recommend linseed, just because it take so long to dry and the smell of it may not be what you'd want to sleep next to?
