the field grade box calls I have from Steve Mann are plain sided rather than patterned but sound amazing!!!

It means you don't pay for fancy woods, checkering or other ornaments. You get a functional call that represents the call makers ability to create a fine sounding call with out it looking like it belongs in a showcase instead of a turkey vest.
