As anyone that is following knows, I am just getting started with this turkey thing and my main source of information is this forum. I Just got back from Cabelas! I purchased the Hevi-Shot Choke tube for my 21" Beneilli M2 and box of Hevi 13 #7 and Hevi 13 Magnum Blend.
I look forward to patterning and I hope that it turns out well. So I guess I am looking for the most pellets in a 10" circle is that how most do it?

Yes. Most, including myself, shoot a large (36"x36") piece of paper or cardboard with a dot to aim at in the dead center. Aim at the dot and shoot. Draw a 10" circle around the densest portion of your pattern. If you are lucky, the dot you aimed at will be dead center of that. If the dense portion doesn't center around or slight above your dot, you will need to adjust your sights (or add some adjustable sights if you don't have them) to where you POA matches your POI.
Well put Daman, can't add much more to that than maybe try to do a very thorough job cleaning the barrel and choke before hand. Clark here has a page on how to do it, it's called deep cleaning and it helped my patterns noticeably.
Just to add to what is already said, you can find your poa and poi with cheap low brass shells first. Once that is accomplished , shoot a couple with the hunting shells.
