Title: Homemade Summer Sausage

My brother and a couple friends just finished smoking 50 rolls of venison summer sausage.
Spiced a few rolls up with some jalapeno mix and hot pepper cheese.
Perfect mid morning snack while turkey hunting!

nothing like good ole summer sausage.  there's a lot of work there but well worth the effort, enjoy.

That looks really good!  I turned in some duck/goose meat last week and had a local butcher make some pepsticks.  He has a new flavor called SW jalapeno cactus, it's really good and hot.  I could feel my head starting to sweat after eating just one pepstick.

Dag nab man that is awesome.  I tried my first batch this winter and ....well.....let's just say I have opportunity to improve next year!!!
