My friend Jean Claude is a Chef and I wanted to make him something that he could use, so I made this fillet knife 12" long out of one of my old Diston saws. The handles are made from Orange Cast Acrylic and I carved the waves in them to help with gripping the knife. It is super sharp and flexible, only thing with this type of metal it needs to be oiled from time to time.
