I'm a big fan of General Tso's chicken so I tried it with wild turkey breast and it was a big hit. Cubed it up and covered with seasoned flour mix and crisped it up in hot oil. Then tossed it in Buffalo Wild Wings Asian Zing sauce and served on a bed of white rice. It was delicious and spicy hot like Tso's should be.
Love me some General Tsao's. I bet the fresh turkey was delicious in it.
Our last cook was turk-fil-et nuggets. Found a recipe that had you soak the cubed breast in pickle juice all night then batter and fry. They were incredible.

We have done a few that were big hits but probably the best was turkey parm. Just like chicken parm but flatten out the breast meat, soak it in pickle juice and then cook your favorite chicken parm recipe. Turkey fajitas are also a big hit.
My personal favorite, mainly because its over looked, are turkey leg enchiladas. Slow cook a set of legs for 14-16 hours in chicken broth until they fall off the bones. Mix the meat up with some cream cheese, diced green chiles, and enchilada sauce. Then briefly fry up the tortillas with some olive oil before you fill them with the meat/chile/cream cheese paste. If you don't fry the tortillas they tend to get soggy. Throw them in a pan and cover them with more enchilada sauce then put them in the over for 15 or so to warm them up before a layer of shredded cheese. They are incredible and you wont ever throw a set of legs away ever again. You can also pre-make a batch and then freeze them but they aren't quite as good as they are fresh. A set of legs usually makes about 16 individually rolled enchiladas. I've had multiple people not believe me when I told them it was turkey legs that were in them.

All those sound delicious. Now that the house is down to me and the Mrs. we do one leg and thigh in the InstaPot for 90 minutes and make turkey salad out of it. Mayo, spicy mustard and pickle relish is all that's needed.

Sounds really good. That dark meat also makes excellent fajitas. Braise or crock pot, then shred. Season and add fresh made salsa from the garden. I like mine spicy ;)
Wash that down with a Mai Tai or a Suffering Bastard perhaps :z-guntootsmiley:
