Title: Wild Turkey thighs

I debone the thighs then brine in water and kosher salt for an hour. Cook them in the crock pot for 10 hours on low with chicken stock and rubbed with a poultry seasoning. Once done I shred them meat with a fork and use the meat in this pre packaged Zatarain's creamy blackened chicken meal. It's is great!

Legs/thighs have become my favorite part of the bird.  That looks great!  Will give it a try.  We make tacos, quesadillas, bbq style sliders, pot pie etc with the leg meat.
