Backstrap Apple Bean Bake.

4 3/4  in. thick backstraps (more if small)
1 Lrg.can baked beans w/ maple syrup
1 or 2 tart apples thick sliced and cored
1 tsp. cinnamon
2 tblsp. brown sugar

In a dutch over or deep iron skillet with tight fitting lid brown straps in oil and remove skillet from heat. Remove straps and set aside. Wipe  excess oil from skillet and add the beans. Lay apple slices on top of beans. Sprinkle with the cinnamon and brown sugar. Lay straps on top of apples and cover. Bake in oven at 350 degrees for 40 - 45 mins.

Works great with pork chops too. You can also add a few strips of bacon on top of the straps. Enjoy.

The backstrap is thawed. Bacon and can(s) of beans have been purchased.  All set to try this tomorrow.  I picked up Granny Smith apples... will these fit the bill and be tart enough?

Great! I've got one backstrap ready to go.  Can I trim the fat and silver skin and proceed to slice the whole thing up in 3/4" thick slices?  It'll be more than described in the recipe.  The backstrap is off of an average sized 1-1/2 year old doe.  I've got extra beans and apples, just in case.

Sure. You can use a bigger pot and add all the extras you want. You can never have too much backstrap.
