Poule d’eau means water chicken or water hen.  I’ve never eaten one, but fellows I trust say that handled and prepared right they are excellent.

Our Cajun friends used them in many dishes,(especially gumbos)
including the Thymus ( which is oversized in Coots) and was occasionally substituted for oysters if there werent any on hand.

My Dad loved the SW LA area. We ate a lot of interesting food down there.

I can't say that I've eaten one, but I can say I've tasted it.  We tried coot and gallinule as a kid in Florida, among other things.

I wish I had been able to eat when I went through LA we were in  Baton Rouge, LA, New Orleans and several other areas in the state but we were in a tractor trailer delivering frozen goods so we really could not stop.

 Yes. Poule deau is what we call a coot. They are prized for their gizzards. No one down here really messes with them. They are a bit gamier than ducks. But the gizzards sure add to a gumbo.
