Title: Smoked Wild Turkey Breast

Picked from a few different recipes I found online to come up with this. Ended up by far the best wild turkey I have cooked up. Enjoy. Oh I ended up raising the cook temp to 225 degrees when the meat temp reached 140 to speed it up as it was taking a bit longer than expected.


SMOKED WILD TURKEY BREAST
WRAPPED IN BACON


BRINE
1.   2 QUARTS WATER
2.   ½ CUP KOSHER SALT
3.   ½ CUP BROWN SUGAR
4.   2 TB GARLIC POWDER
5.   2 TB ONION POWDER
6.   ¼ CUP APPLE CIDER VINEGAR

DRY RUB  (ADJUST TO TASTE)
1.   3 TB COARSE BLACK PEPPER
2.   1 TS CAYENNE (OR CHIPOTLE)
3.   1 TB GARLIC POWDER
4.   1 TS CUMIN
5.   1 TS SMOKED PAPRIKA


CLEAN AND PLACE TURKEY BREAST IN BRINE AND SOAK FOR 24 HOURS. REMOVE FROM BRINE AND RUB WITH DRY RUB. WRAP WITH BACON AND SMOKE (with water pan)  ON 200 DEGREES UNTIL THE BREAST REACHES AN INTERNAL TEMP OF 155 TO 160. REMOVE FROM SMOKER AND LOOSELY COVER WITH FOIL FOR 15 TO 30 MIN. SLICE AND DIG IN!!!

I'm going to have to try this.  I've been wanting to smoke a breast but I've been worried about it coming out like boot leather

Going to have to do this in a few weeks!  I'm big on smoking meats but have been a little hesitant that I'd dry a wild bird out on the BGE

Well unworried about drying out a skinless turkey breasts myself but it turned out great.  The recipe I used was very similar to the one mentioned.  Brining is key to the recipe.   I ended up laying some thick sliced bacon across the top while it was on the smoker and then when it was close to done I pulled it off the smoker a seared it on the gas grill just to give it a little bark.  Turned out great and it was not dry at all.

Sounds good, I wonder how it would be without the brown sugar, I can't have sugar on my diet, have to keep as close to zero carbs and sugar as I can.
