2nd Gun Carving

Finished my 2nd ever gunstock carving. Anybody have experience doing this?  I'm not sure of the best finish though. First one I did a natural stain and spar varnish but am not crazy about it.  Do you think Tung oil or Boiled linseed would work better for carvings?

honestly like I said I've only done two and never carved before this. I found the carving tools in some things I got from dad 2 years ago and decided to try it on an old gun which turned out decent but I learned a lot doing the first one so I tried this one on a gun that isn't really valuable just to see and I'm so much happier with it than the first one. I think I'm going to try another turkey one on a Winchester semi that I've got. Here's a pic of the first one that I did
